Cinco de Mayo Recipe: Shane Diet & Fitness Resorts’Mango Salsa

With Cinco de Mayo this weekend and with backyard BBQs being planned all summer-long, a go-to salsa recipe is a must. We are just loving this sweet mango salsa  from Shane Diet and know that once you try it, you will too!

 

Mango Salsa 
Makes 4 servings

Ingredients:
1-1/2 cups diced mango
3 tablespoons finely chopped jalapeno pepper
3 tablespoons finely chopped red onion
3 tablespoons orange bell pepper
2 tablespoons fresh chopped cilantro
3 tablespoons chopped tomato
1 tablespoon lime juice

Directions:
Combine all ingredients in a storage container. Cover and chill for up to 3 days. Yield 2 cups.

Make it a meal:  Add 1 grilled tilapia fillet per person, topped with mango salsa!
